Fluffy Pancakes

You can finally say goodbye to your boxed pancake mix. These fluffy vegan pancakes are a great recipe to cook over the weekend with family for breakfast or brunch. They’re extremely light, soft and fluffy, and so quick and easy to make. They’re not too sweet and are flavoured with vanilla. You can easily quarter, half or double the recipe to make as many pancakes as you like! 

 

What’s the secret behind making these pancakes fluffy?

The secret to make these fluffy is to mix the dry and wet ingredients separately at first, then combine just before cooking. You can mix the ingredients as much as you want separately, however once they’re combined, gently fold the wet ingredients into the dry ingredients. Overmixing will result in heavy and flat pancakes. Another secret is to mix the wet and dry ingredients when you’re ready to cook. Do not prepare the batter in advance.

 

What can I serve the pancakes with?

Pancakes are great with icing sugar and maple syrup, but you can also serve them with chocolate chips, chopped nuts such as almond and pistachios, chocolate spread/syrup, fresh berries, bananas, ice-cream, honey, caramel syrup or some good old butter! 

 

Can I use self raising flour instead of regular flour?

Self raising flour contains baking powder and salt. I haven’t tried this before, but if you intend to use self raising flour, it is completely possible. You’ll need 165 grams of self raising flour, and you’ll need to reduce the baking powder from 2.5 Tsp to 1.25 Tsp and skip the salt. This should give you the same final flavour and texture.

 

Why do we need to add Apple Cider Vinegar?

Apple Cider Vinegar is a great egg substitute for making any eggless dessert. The Apple Cider Vinegar helps in replacing the need to add eggs and in making the pancakes soft and fluffy. You can replace apple cider vinegar and baking soda with ground flax seeds and ice cold water to make the pancakes equally soft and fluffy.

 

Are the pancakes already sweet?

Nope, the pancakes have limited sugar. Hence, they are not sweet if eaten without any toppings. I would suggest you to top the pancakes with something sweet to get the best experience out of it. If you’d like to make your pancakes more sweet, you could simply increase the quantity of sugar required in this recipe. 

 

Do I need to add vanilla extract?

Vanilla extract helps to enhance sweetness and adds a depth of flavor to the pancakes. However, if you don’t have access to it, you can skip it! 

 

Can I make the pancakes in advance and store it?

I wouldn’t recommend making the pancake batter in advance and storing it, however you can definitely freeze the pancakes once they’re cooked and reheat them when you like. Ensure the pancakes have completely cooled down before freezing them. Don’t forget to place a layer of aluminium foil, cling film or parchment paper in between the pancakes so they don’t stick to each other. Place them in a freezer bag and store them until you need them. To reheat, simply pop them into the microwave or oven.

 

Any substitutes for the ingredients mentioned?

Unfortunately, there are not many substitutes for this recipe! Most of the ingredients cannot be replaced as they help in making the pancakes soft and fluffy. However, there are a number of substitutes available. 

  1. You can make this recipe using self-raising flour if you have run out of regular all purpose flour. Just make sure to adjust the quantities of flour and baking powder, as mentioned above. 

  2. Soy milk can be substituted with almond, oat or any other plant based milk of your choice. 

  3. Nutmeg and cinnamon is completely optional. You can skip it if you like.

 

Any tips for making the pancake fluffy?

  1. Ensure you measure all the ingredients correctly and don’t leave out the corn flour, baking powder, baking soda and apple cider vinegar. These ingredients help in creating the fluffy texture.

  2. Don’t over mix/fold the batter once you have incorporated the wet and dry ingredients as this will result in flat pancakes.

  3. Don’t leave the pancake batter to rest once all the ingredients have been mixed. Ensure you cook the pancakes right away.

  4. When cooking the pancake, ensure the heat is kept at medium/low. The pancakes might burn on one side before you realise.

  5. You only need to flip the pancakes once, when one of the sides is cooked. Over flipping will result in deflated pancakes.
